Tomato and Chive Focaccia

A little variant to a classic Italian favorite using whatever herbs and veggies we have growing in our garden. Once you make the dough, you can be creative and do this with any topping of your choice.

  • 350g flour
  • 1 teaspoon salt
  • 7g yeast
  • 150ml lukewarm water
  • 4 tablespoons olive oil
  • For decoration and flavor: chive flowers, sage flowers, bell pepper, cherry tomatoes


・小麦粉 350g
・塩 小さじ1
・イースト 7g
・ぬるま湯 150ml
・オリーブオイル 大さじ4


Mix the flour, salt, and yeast in a bowl.


Add the olive oil and water, start to mix and knead, the dough will stay sticky throughout. Let rest for one hour with a towel over it in a warm place.


After an hour, it will have risen. Take the air out by kneading a few more times and transfer to the baking tray (you have to oil the tray before).


Poke the dough with your fingers, sprinkle oil and salt.


For decoration and flavor, gently put the herbs and vegetables on the dough.


Bake for 20 minutes at 220 degrees Celsius, take out when the top is colored nicely.
